Long weekends

What to say about long weekends. How come every weekend isn`t a long weekend? And what is it about long weekends that just makes you long for every weekend to be a long weekend?  For me it’s like chocolate- we`re “supposed” to eat a small piece, and ta-da!, your craving for chocolate disappears! Nope… the more I have, the more I want.  You get one long weekend every month or two, but obviously, we want more, more, more of them!   A 3 day weekend/4 day work week is something I could get on-board with.  Who the heck came up with the idea that the weekend should only be two days?

Long weekends are for relaxing.  An extra day to sleep in, spend with your family, eat chicken.  Okay not necessarily to eat chicken, but if you are craving roasted chicken, like I was, then definitely eat some chicken.   I felt like making a chicken & some root vegetables, so I wandered the store until I found what I deemed the absolute perfect combination.  Sweet potato, red potato, golden beets, a few different colours of carrots, and brussel sprouts (those don`t take as long to cook though, so throw them in partway through).  I did absolutely no prep to the chicken, admittedly.  I just really wanted chicken.  I threw it in the oven with the roughly chopped root veg, with a little olive oil, salt & pepper.  It worked.  AND I threw in a clove of garlic to roast with it.  If you haven`t done this… please… do it now.  Its just so yummy.  You just chop the top of an entire head of garlic, drizzle it with olive oil, and throw it in the oven to roast. Oh-em-gee.  Then you can mash it into some potatoes to make garlic mashed potatoes, or if you are classy like me, just eat it straight out of the aluminum wrap. Whatever, roasted garlic is delicious.

I`m proud of that chicken.  While it was cooking, it smelled so good that I declared it the best thing ever cooked in the history of the earth, because I am modest like that.  It was quite good though. Lets just say I ate too much chicken for dinner that night.  And also that I will be making it again later this week.

In other important food news, I made peanut butter cookies.  Turns out, those are a great thing to make when you have absolutely no baking ingredients in your house.  The recipe on the back of the peanut butter container calls for all of three ingredients: sugar, an egg, and (you guessed it) peanut butter.  Mmmmmm…

DSC_7652They take about 5 minutes to prepare & 10 to bake, and then you get to spend the rest of the day trying not to devour the entire batch!  Good luck with that- if you figure out how to do that, let me know.  The best I can come up with is chewing gum while baking to stop myself from sneaking cookies and/or dough.  But I have yet to buy said gum, because as I said, it would kinda get in the way of my cookie eating…
